HEALTHY RECIPE OF THE MONTH: MIX & MATCH SUMMER CROSTINI BAR
INGREDIENTS
Bread & Crackers
1 baguette, sliced
Olive oil crackers
Spreads
Cashew cream (recipe below), brie, pesto
Herbs
Basil, mint, fresh oregano or chives
Fruit
Figs, cherry tomatoes, peaches
Kitchen Jams
Stonewall Kitchen Strawberry Champagne Jam
Stonewall Kitchen Roasted Garlic and Onion Jam
Hot Pepper Peach Jam
Extras
Crushed pistachios
Pine nuts
Sea salt
Olive oil for drizzling
Cashew Cream Recipe
1 cup raw cashews*
*Soak for 3 hours or overnight, and then rinse and drain
1/3 cup water, more as needed
2 tablespoons lemon juice
1 small garlic clove
1/2 teaspoon sea salt
INSTRUCTIONS
1. Make the cashew cream: Place the cashews, water, lemon juice, garlic and salt in a high-speed blender and puree until smooth. Chill for 30 minutes or until ready to use.
2. Heat a grill or grill pan. Drizzle the baguette slices with olive oil and grill until char marks form, about 4 minutes per side.
3. Assemble crostini ingredients and serve. (Editor's Note: And watch your guests swoon!)
