Featured Recipe: Kaylee's Coconut Island Banana Bread

Kaylee's Coconut Island Banana Bread

2 1/4 cups unbleached all-purpose flour

2 cups sugar

4 eggs

4-5 overly ripe bananas (mashed)

3/4 cup canola oil

2 teaspoons baking soda

1/2 - 1 cup chocolate chips or chocolate shavings

Coconut flakes to taste

Vanilla extract to taste

  • Preheat oven to 350 degrees

  • Mix all dry ingredients first - let sit for 30 minutes while covered in a mixing bowl; Add remaining ingredients; Stir by hand until evenly clumpy

  • Bake for 50-60 minutes in a bread pan and adjust accordingly to elevation, pan type and preference of moisture content.
